I found that just by specifying the -sid or -slang of the subs you want in the 
mencoder command line, they are rendered directly to the avi.

i.e.  mencoder dvd://1 -slang en -ovc lavc -lavcopts 
vcodec=mpeg4:vhq:vbitrate=1400 -oac copy -o title.avi
