Essaye ça

mplayer dvd:// -vo null -frames 0 -v 2>&1 | grep sid

Tu auras les différents sous-titres
Tu encodes avec le -sid x , x qui va bien avec le sous-titre que tu veux.

J'encode en trois passes et pour le son ça donne:

# pour le sous-titre
sid='0'

# augmenter ou diminuer le volume
# marche pas avec copy
volume='3'

# numéro de la piste sur le dvd
piste='2'

# langue parlée
audio-lang='en'

# position finale -endpos 00:02:00 peut se compter en mb\
# position initiale -ss


nice -19 mencoder dvd://$piste\
    -vobsubout soustitres -vobsuboutindex 0\
    -sid $sid -af volume=$volume -alang $audio-lang \
    -o frameno.avi -ovc frameno\
    -oac mp3lame -lameopts abr:br=310
