You can just skip frames, but in most cases this only works when the
interlaced material is just the titles or very short sequences with
little motion.

What most people are interested in deinterlacing for is to fix broken
interlacing, where somebody has intentionally interlaced the material
and made a mess of things. For an example, see any of the Shaw Brothers
"restored" Monkey King films.
